Tofu Tikka Masala

INGREDIENTS

Masala:

  • 5 ripe tomatoes
  • 1 red onion, roughly chopped
  • 5 garlic cloves
  • 1 apple, roughly chopped
  • 1 yellow/orange bell pepper, roughly chopped
  • 1 inch ginger
  • 1/4 cup cashews
  • 1/8 cup pumpkin seeds
  • 1/8 cup sunflower seeds
  • 1 tbsp garam masala
  • 2 teaspoon salt
  • 1 teaspoon turmeric
  • 4 cups water
  • 2 dates
  • 1 tbsp avocado oil
  • 2 tbsp kasoori methi (optional)
  • 3 tbsp nutritional yeast
  • 1 cup chopped cilantro

Tofu:

  • 2 packages of firm or extra firm tofu
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric

DIRECTIONS

  1. Preheat oven to 425 F
  2. Chop onion, tomatoes, garlic, ginger, and peppers into 1-inch cubes.
  3. Cut tofu into cubes.
  4. On the first baking tray lined with parchment paper, add the chopped veggies, ginger, garam masala, turmeric, cashews and bake in the oven for 20 minutes.
  5. On the second baking tray lined with parchment paper, add tofu cubes marinated in the garam masala and turmeric and bake in the oven for 15 minutes.
  6. Puree the ingredients from the first tray with 4
    cups of water.
  7. Empty the puree in a pot and put on stove top at medium heat.
  8. Add the tofu cubes, nutritional yeast and kasoori methi.
  9. Let it all simmer for 15 mins.
  10. Garnish with chopped cilantro
  11. Enjoy with cauliflower rice, brown rice, quinoa, or whole grain of your choice.
