Winter Peach and Berry Crumble Recipe
Serves: 8
INGREDIENTS
- 1 bag of frozen peaches (12-16 oz)
- 1 bag of frozen blue berries (12-16 oz)
- 1 bag of frozen raspberries (12-16 oz)
- 2 tablespoons maple syrup
- 1 cup oats
- 1 cup almond meal
- 6-8 dates
- 2 tablespoons canola or olive oil
- Optional:
- Plain Greek or coconut milk yogurt
- Sliced almonds
DIRECTIONS
- Thaw frozen fruits in the refrigerator overnight
- Preheat oven to 375 degrees F
- Mix in a 9×13 inch baking pan: peaches, blueberries, rasp-berries, and maple syrup
- In a food processor, mix oats, almond meal, dates and oil until fine.
- Crumble topping on top of the fruit
- Cover with aluminum foil.
- Bake for 75 minutes or until bubbly.
- Serve with plain Greek yogurt or plain coconut milk yogurt and garnish with almond slivers .
Note: In the summer, use fresh fruit
