Winter Peach and Berry Crumble Recipe

Serves: 8

INGREDIENTS

  • 1 bag of frozen peaches (12-16 oz)
  • 1 bag of frozen blue berries (12-16 oz)
  • 1 bag of frozen raspberries (12-16 oz)
  • 2 tablespoons maple syrup
  • 1 cup oats
  • 1 cup almond meal
  • 6-8 dates
  • 2 tablespoons canola or olive oil
  • Optional:
  • Plain Greek or coconut milk yogurt
  • Sliced almonds

DIRECTIONS

  1. Thaw frozen fruits in the refrigerator overnight
  2. Preheat oven to 375 degrees F
  3. Mix in a 9×13 inch baking pan: peaches, blueberries, rasp-berries, and maple syrup
  4. In a food processor, mix oats, almond meal, dates and oil until fine.
  5. Crumble topping on top of the fruit
  6. Cover with aluminum foil.
  7. Bake for 75 minutes or until bubbly.
  8. Serve with plain Greek yogurt or plain coconut milk yogurt and garnish with almond slivers .

Note: In the summer, use fresh fruit
