Tofu Scramble
Serves: 4
INGREDIENTS
- 1 tbsp oil (avocado, olive, canola, etc)
- 1 16-oz block firm tofu (if you only have soft, that is OK)
- 2 tbsp nutritional yeast
- ½ tsp salt
- ¼ tsp turmeric
- ¼ tsp garlic powder
- (Optional: 1 tbsp tahini, ¼ tsp paprika, ¼ tsp chipotle chili flakes,
- ¼ tsp black pepper)
- 2 tbsp nondairy, unsweetened milk
DIRECTIONS
- Heat oil in pan.
- Add tofu and mash tofu in pan with fork or potato masher, if not already crumbled.
- Cook, stirring frequently for 3-4 min, until water is mostly evaporated.
- Add nutritional yeast, salt, turmeric, garlic powder, and optional tahini and spices. Cook and stir constantly for another 5 minutes.
- Add the nondairy or regular milk and stir until cooked in.
