Tofu Scramble

Serves: 4


INGREDIENTS

  • 1 tbsp oil (avocado, olive, canola, etc)
  • 1 16-oz block firm tofu (if you only have soft, that is OK)
  • 2 tbsp nutritional yeast
  • ½ tsp salt
  • ¼ tsp turmeric
  • ¼ tsp garlic powder
  • (Optional: 1 tbsp tahini, ¼ tsp paprika, ¼ tsp chipotle chili flakes,
  • ¼ tsp black pepper)
  • 2 tbsp nondairy, unsweetened milk

DIRECTIONS

  1. Heat oil in pan.
  2. Add tofu and mash tofu in pan with fork or potato masher, if not already crumbled.
  3. Cook, stirring frequently for 3-4 min, until water is mostly evaporated.
  4. Add nutritional yeast, salt, turmeric, garlic powder, and optional tahini and spices. Cook and stir constantly for another 5 minutes.
  5. Add the nondairy or regular milk and stir until cooked in.
