Spice Roasted Cauliflower

Serves: 4


INGREDIENTS

1 medium head cauliflower-cut into bite size pieces(about 4 cups)
½ teaspoon cumin
¼ cup vegetable broth
¼ teaspoon salt (more or lessdepending on your taste)
Lemon or lime
Fresh herbs: Cilantro or mintor fresh herb of your choice—2-3 Tablespoons, chopped


DIRECTIONS

  1. Preheat oven to 475 degrees F.
  2. Toss the cauliflower pieces with about1 Tablespoon broth in a bowl. Add the cumin and salt.
  3. Place the cauliflower on a parchment lined baking sheet. Be careful to place them in a single layer and not a lot of broth with it. We don’t want them to steam.
  4. Place the pan in the oven. Check after 10minutes. Pour on more broth to keep them moist. Put the pan back in the oven.Check again after 10 minutes. Take tongs and flip the cauliflower pieces over and add more broth. Bake for an additional 5-10 minutes. Be sure to watch them to make sure they don’t overcook.
  5. After taking them out of the oven, finish with a squeeze of lime or lemon juice and sprinkle with herbs
