Sloppy Lentil Joes
Serves: 6-8
INGREDIENTS
- 1 cup uncooked lentils (brown or green)
- 3 cups vegetable broth (ok to substitute chicken broth or water)
- 1 medium yellow or white onion
- 1 red or yellow or green bell pepper
- 1 carrot½ teaspoon olive oil (or avocado or canola oil)
- 2 garlic cloves
- 3 Tablespoons chili powder
- 2 teaspoons oregano
- ½ teaspoon salt
- 1 cup (8 oz can) tomato sauce
- ¼ cup tomato paste
- 2 Tablespoons maple syrup or brown sugar
- 1 Tablespoon yellow mustard
- Whole Wheat Hamburger buns
- Toppings (options): lettuce, tomato,onions, avocado.
DIRECTIONS
- Put lentils and broth (or water) in a pan and bring to a boil. Once boiling, turn down the heat to simmer (low) and cook for 20 min or until lentils are tender. Set aside.
- Chop the onion and bell peppers into fine pieces(small chop).
- Heat frying pan until water sizzles. Add oil. Add the onion and bell peppers. Cook about 7 min or until nicely browned.
- Shred the carrot (or finely chop) and add to onion and bell pepper mixture and cook another1-2 min. Add garlic and cook another 1-2 min until browned.
- Stir in the lentils, chili powder, oregano, salt,tomato sauce, tomato paste. Cook for another 10min.
- Add maple syrup or brown sugar and the mustard and stir well and cook another 1-2 min. until fully heated.
- Serve on hamburger bun with optional toppings.
