Sloppy Lentil Joes

Serves: 6-8


INGREDIENTS

  • 1 cup uncooked lentils (brown or green)
  • 3 cups vegetable broth (ok to substitute chicken broth or water)
  • 1 medium yellow or white onion
  • 1 red or yellow or green bell pepper
  • 1 carrot½ teaspoon olive oil (or avocado or canola oil)
  • 2 garlic cloves
  • 3 Tablespoons chili powder
  • 2 teaspoons oregano
  • ½ teaspoon salt
  • 1 cup (8 oz can) tomato sauce
  • ¼ cup tomato paste
  • 2 Tablespoons maple syrup or brown sugar
  • 1 Tablespoon yellow mustard
  • Whole Wheat Hamburger buns
  • Toppings (options): lettuce, tomato,onions, avocado.

DIRECTIONS

  1. Put lentils and broth (or water) in a pan and bring to a boil. Once boiling, turn down the heat to simmer (low) and cook for 20 min or until lentils are tender. Set aside.
  2. Chop the onion and bell peppers into fine pieces(small chop).
  3. Heat frying pan until water sizzles. Add oil. Add the onion and bell peppers. Cook about 7 min or until nicely browned.
  4. Shred the carrot (or finely chop) and add to onion and bell pepper mixture and cook another1-2 min. Add garlic and cook another 1-2 min until browned.
  5. Stir in the lentils, chili powder, oregano, salt,tomato sauce, tomato paste. Cook for another 10min.
  6. Add maple syrup or brown sugar and the mustard and stir well and cook another 1-2 min. until fully heated.
  7. Serve on hamburger bun with optional toppings.
