Savory Veggie Chickpea Pancake

Serves: 4


INGREDIENTS

  • 2.5 cups chickpea flour
  • ¼ cup diced green pepper
  • ¼ cup diced red pepper
  • ¼ cup finely chopped red cabbage
  • ½ cup finely chopped red onion
  • ½ cup finely chopped chard/spinach
  • 1/2 cup fresh corn kernels or frozen corn kernels
  • ¼ cup finely chopped fenugreek leaves
  • ½ cup freshly chopped cilantro
  • 3 finely chopped garlic cloves
  • 1 tablespoon grated ginger
  • 1 tablespoon nutritional yeast
  • 1 tablespoon flax seed powder
  • 1 tablespoon garam masala or magic masala (if you do not have that you can add: 1 tablespoon of cumin seeds, 1 tablespoon of coriander powder)
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

DIRECTIONS

  1. Mix all ingredients in a bowl and add water until a batter-like consistency is achieved.
  2. Heat the griddle/nonstick pan
  3. Brush with a little oil
  4. Add batter (around 2 ladles full) to the griddle and spread it.
  5. Cover it and let it cook.
  6. Once it turns brown and forms bubbles, flip it and cook till brown.
  7. Enjoy with green chutney/salsa.
