Savory Veggie Chickpea Pancake

INGREDIENTS
- 2.5 cups chickpea flour
- ¼ cup diced green pepper
- ¼ cup diced red pepper
- ¼ cup finely chopped red cabbage
- ½ cup finely chopped red onion
- ½ cup finely chopped chard/spinach
- 1/2 cup fresh corn kernels or frozen corn kernels
- ¼ cup finely chopped fenugreek leaves
- ½ cup freshly chopped cilantro
- 3 finely chopped garlic cloves
- 1 tablespoon grated ginger
- 1 tablespoon nutritional yeast
- 1 tablespoon flax seed powder
- 1 tablespoon garam masala or magic masala (if you do not have that you can add: 1 tablespoon of cumin seeds, 1 tablespoon of coriander powder)
- 1 teaspoon turmeric powder
- 1 teaspoon black pepper
- 1 teaspoon salt
DIRECTIONS
- Mix all ingredients in a bowl and add water until a batter-like consistency is achieved.
- Heat the griddle/nonstick pan
- Brush with a little oil
- Add batter (around 2 ladles full) to the griddle and spread it.
- Cover it and let it cook.
- Once it turns brown and forms bubbles, flip it and cook till brown.
- Enjoy with green chutney/salsa.
