Roasted Broccoli and Cauliflower

Serves: 4-6


INGREDIENTS

  • 4 cups chopped broccoli
  • 4 cups chopped cauliflower
  • 2 Tablespoons olive oil
  • ½ teaspoons salt
  • ½ teaspoon black pepper
  • Optional seasonings: 1 teaspoon of any of the following–cumin powder, cumin seed, sesame seeds, garlic—thinly sliced or garlic powder,other spice of your choice

DIRECTIONS

  1. Preheat oven to 425.
  2. Chop broccoli and cauliflower into 1 inch uniform florets.
  3. Mix broccoli with 1 Tablespoon of the oil, ¼ teaspoon salt, and ¼ teaspoon pepper, and any additional optional spices and mix well.
  4. On a separate tray, mix cauliflower, other 1 Tablespoon of the oil, salt, and pepper, and any additional spices and mix well.
  5. Spread out on large roasting pan with parchment paper or cooking spray.
  6. Roast in oven for 15-20 min until well browned for broccoli and 20-25 min for cauliflower, stirring ½ way through.
