Pumpkin Chocolate Chip Pancakes

Serves: 4-6


INGREDIENTS

  • 2 cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon pumpkin pie spice or
  • 1 teaspoon cinnamon
  • 2 tablespoons ground flax seed
  • ½ cup cashews, soaked in boiling water
  • 6 small dates, soaked in 1 cup boiling water
  • ½ cup pumpkin puree
  • 1 ¾ cups water
  • ½ teaspoon vanilla
  • ½ cup chocolate chips

DIRECTIONS

  1. Soak dates and cashews in 1 cup boiling water.
  2. Mix together the dry ingredients: flour, baking soda, and baking powder.
  3. Wet ingredients: In a high speed blender or food processor, combine soaked cashews and dates (along with 1 cup water soaked in), flax seed, water, pumpkin, and vanilla.
  4. Mix the wet ingredients into the dry ingredients. Mix in the chocolate chips
  5. Preheat a griddle or nonstick skillet. Scoop ¼ cup batter in to pan to make a circular pancake. Cook until browned. Flip and cook until browned on the other side.
