Pumpkin Chocolate Chip Pancakes
Serves: 4-6
INGREDIENTS
- 2 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon pumpkin pie spice or
- 1 teaspoon cinnamon
- 2 tablespoons ground flax seed
- ½ cup cashews, soaked in boiling water
- 6 small dates, soaked in 1 cup boiling water
- ½ cup pumpkin puree
- 1 ¾ cups water
- ½ teaspoon vanilla
- ½ cup chocolate chips
DIRECTIONS
- Soak dates and cashews in 1 cup boiling water.
- Mix together the dry ingredients: flour, baking soda, and baking powder.
- Wet ingredients: In a high speed blender or food processor, combine soaked cashews and dates (along with 1 cup water soaked in), flax seed, water, pumpkin, and vanilla.
- Mix the wet ingredients into the dry ingredients. Mix in the chocolate chips
- Preheat a griddle or nonstick skillet. Scoop ¼ cup batter in to pan to make a circular pancake. Cook until browned. Flip and cook until browned on the other side.
