Pumpkin Chocolate Chip Muffins

INGREDIENTS

  • 1 cup whole wheat flour
  • 3/4 cup spelt flour (or can use whole wheat or oat flour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1 cup pumpkin purée
  • ½ cup unsweetened applesauce
  • 2 tablespoon ground flax seed mixed in
  • 6 tablespoons warm water (let stand 2 minutes and mix again)
  • 3 tablespoon maple syrup
  • 1/2 cup dark chocolate chips (optional)
  • 1/3 cup chopped nuts (pecans, walnuts, etc)

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together the dry ingredients (flours, baking soda, baking powder, salt, nutmeg, cinnamon, allspice, cloves).
  3. In a small bowl, whisk together pumpkin, applesauce, flax seed mixture and maple syrup.
  4. Combine dry and wet ingredients and mix until blended.
  5. Add dark chocolate chips and nuts if desired.
  6. Prepare a muffin pan with liners or spray with cooking spray.
  7. Divide batter into 12 muffins.
  8. Bake in oven about 18-20 minutes (check to make sure just cooked in middle—toothpick or fork comes out clean).
