Pickled Onions Recipe

Serves: 4– 6
Prep Time: 5 minutes

INGREDIENTS

  • 1 medium onion (purple, white, yellow)
    ½ cup vinegar (white or apple cider)
    ½ cup water
    1 ½ Tablespoons sugar (brown or white)
    1 ½ teaspoons salt
    Optional: coriander seeds or black
    peppercorns

DIRECTIONS

  1. Slice onion vertically to create long thin strips.
  2. Place onion in glass jar (about 2 cup jar) with tight fitting lid
  3. Combine vinegar, water, sugar, salt and optional
    ingredients in a pot and bring to a boil on the stove. Stir well and cook until sugar and salt are dissolved. Turn off heat.
  4. Pour hot liquid over the onions in the glass jar and make sure all the onion slices are submerged.
  5. Close the lid and let sit at room temperature until cools. Ready to use after at least 30 minutes. Refrigerate (saves for 1-2 weeks).
