Oven-Roasted Tomato Sauce
Serves: 3-4
INGREDIENTS
- 3 cups chopped ripe tomatoes (dry-farmed early girl or Roma are best)
- 6 cloves garlic, peeled
- 3 tablespoons fresh oregano or 1 tablespoon dry oregano
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon pepper (to taste)
DIRECTIONS
- Preheat oven to 375 degrees F.
- Chop tomatoes and place in bowl.
- Add the rest of the ingredients and stir.
- Spread in one layer on a parchment-lined (or use cooking spray) baking pan.
- Roast in the oven for 20 to 45 minutes, depending on desired flavor.
- Toss with pasta or use as a pizza top-ping or in Kalesedilla recipe.
