Mint Chocolate Mousse

INGREDIENTS
- 1 package Silken tofu (12 oz)-make sure it is Silken tofu type otherwise will not turn out (Mori-Nu is one brand)
- 1/3 cup maple syrup
- 1 Tablespoon fresh mint leaves
- 2 Tablespoons dark cacao powder
- 1 teaspoon vanilla
EQUIPMENT
- Food processor or blender
- 4 ramekins or small bowls
- Spoon
- spatula
DIRECTIONS
- Place ½ of the tofu, ½ of the maple syrup, ½ teaspoon vanilla, and the mint in a food processor or blender and blend for 2-3 minutes or until totally smooth and light.
- Spoon portions into each of the 4 bowls putting it on one side of ramekin or bowl.
- Place the other ½ of the tofu, the other ½ of the maple syrup, the cocoa powder, and the ½ teaspoon vanilla in the same food processor or blender. Blend for 2-3 minutes until totally smooth and light.
- Spoon the chocolate mixture into the other half of the bowl with the mint mixture. Using a knife or fork, gently swirl the 2 mousses together to make a nice pattern.
- Refrigerate for at least 1 hour or even overnight to make it chilled for serving.
- Serve with a fresh mint sprig.
