Mashed Potatoes

INGREDIENTS

  • 6 Yukon Gold medium potatoes
  • 6 tablespoons nutritional yeast
  • 2 teaspoons fresh garlic, minced,
  • 2-3 cloves
  • 2 cups non-dairy milk of choice (unsweetened almond milk is best here) or water
  • 1 teaspoon dried rosemary
  • Freshly ground black pepper, to taste

DIRECTIONS

  1. Cut the potatoes into small 1-inch chunks and place them into a large pot. Cover the potatoes with water and boil until tender, about 10 minutes.
  2. Drain the potatoes then place them in a large bowl and mash them with a potato masher, a ricer, an egg beater, or a fork.
  3. Add nutritional yeast, garlic, unsweetened almond milk or water and mash until smooth. They will need more liquid than you might expect since the nutritional yeast soaks up liquid. You may need to add a bit more liquid.
  4. Stir in dried rosemary and black pepper to taste.
