Mango Coconut Kale Salad

Serves: 4


INGREDIENTS

  • 2 Tablespoons olive oil
  • 1 Tablespoon white balsamic or rice vinegar
  • 1 Tablespoon honey or maple syrup
  • ¼ teaspoon pepper
  • ¼ teaspoon salt
  • 6 cups (About 2 small bunches) kale or lettuce mix
  • 1 medium avocado
  • ¼ cup unsweetened coconut flakes
  • ¼ cut chopped almonds (or nut of your choice)
  • 1 large mango, chopped (also can use peaches, mandarin oranges, fruit of your choice)

DIRECTIONS

  1. Make dressing by combining olive oil, vinegar, honey or maple syrup, pepper, and salt in a bowl or jar and stir or shake well.
  2. Wash and de-stem the large parts of the kale.
  3. Chop into ½ inch or smaller strips. If using lettuce mix, make sure washed.
  4. Massage ½ of the dressing into kale for 2-3 minutes to soften the kale and distribute dressing. If using lettuce mix, skip this step.
  5. Chop avocado and add to salad.
  6. Chop mango and add to salad.
  7. Add coconut flakes and nuts to salad and toss gently with the other ½ of the dressing (or all of the dressing if using lettuce mix).
