Kale Mandarin Orange Salad

Prep Time: 8 -10 minutes


INGREDIENTS

  • 1 bunch lacinato kale (flat dark kale), but any kale will work.
  • 1 lemon
  • 2Tablespoons olive oil + drizzle
  • 2 teaspoons honey
  • Salt, pepper
  • 2 mandarin oranges (or can use other seasonal fruit like peaches, strawberries, blueberries, apples, pears, etc.)
  • 2 Tablespoons pepitas (pumpkin seeds). Also, can use other seeds or nuts (sunflower seeds, chopped almonds, chopped walnuts, pistachios, etc.).

DIRECTIONS

  1. Prepare kale by washing and chopping into bite size pieces. Place in bowl and massage with drizzle of olive oil, half lemon juice, salt and pepper. Set aside 2-3 minutes while making dressing
  2. Whisk together remaining lemon juice, honey, and ground black pepper, and stream in 2 Tablespoons olive oil to your liking of consistency.
  3. Pour dressing over kale, toss, and top with mandarin oranges and pepitas.
