Kale Mandarin Orange Salad

INGREDIENTS
- 1 bunch lacinato kale (flat dark kale), but any kale will work.
- 1 lemon
- 2Tablespoons olive oil + drizzle
- 2 teaspoons honey
- Salt, pepper
- 2 mandarin oranges (or can use other seasonal fruit like peaches, strawberries, blueberries, apples, pears, etc.)
- 2 Tablespoons pepitas (pumpkin seeds). Also, can use other seeds or nuts (sunflower seeds, chopped almonds, chopped walnuts, pistachios, etc.).
DIRECTIONS
- Prepare kale by washing and chopping into bite size pieces. Place in bowl and massage with drizzle of olive oil, half lemon juice, salt and pepper. Set aside 2-3 minutes while making dressing
- Whisk together remaining lemon juice, honey, and ground black pepper, and stream in 2 Tablespoons olive oil to your liking of consistency.
- Pour dressing over kale, toss, and top with mandarin oranges and pepitas.
