Hummus Wraps - 3 Ways

INGREDIENTS
- 1 Whole Grain Tortilla
- 2 Tablespoons hummus (see recipe for homemade hummus)
- Veggies (see suggestions below):
cherry tomatoes, cucumbers,roasted sweet potatoes,avocado, beets, sweet peppers, carrots, avocado,chopped lettuce, blueberries(or any veggie you like!) - 1 teaspoon roasted sunflower seeds
DIRECTIONS
- Spread hummus on tortilla.
- Top with veggies/toppings of your choice
- Roll up and slice in ½ or in smaller circles
OPTIONS
- Add chopped cherry tomatoes, cucumbers sliced in circles or ovals, and 1 teaspoon roasted sunflower seeds
- Add roasted sweet potatoes (chop sweet potato into 1 cm cubes and bake in 400degree oven for 25 minutes or until browned),2-3 slices of avocado (about ¼ of a medium avocado), and 1 teaspoon roasted sunflower seeds.
- Rainbow Wrap: Add roasted beets or shredded raw beets, shredded carrots or roasted sweet potatoes, chopped sweet yellow peppers, chopped cucumber,blueberries (yes!), and roasted sunflower seeds. Feel free to change-up veggies/fruit to make the rainbow!
