Guacamole and Baked Chips

Serves: 4


INGREDIENTS

  • 1 large or 1 ½ medium avocados – peeled, pitted, and mashed
  • ½ lime, juiced
  • ½ teaspoon salt
  • ¼ cup diced onion
  • 1-2 tablespoons chopped fresh cilantro
  • 1 small to medium tomato, diced
  • 1 teaspoon minced garlic
  • 1 pinch ground cayenne pepper
  • 4 corn tortillas
  • Salt for tortillas (sprinkle)
  • Cooking spray or olive or canola oil

DIRECTIONS

Tortilla Chips:

  1. Preheat oven to 350 degrees.
  2. Cut tortillas into triangles (About 8 per tortilla) and spread out on a cookie sheet or large oven proof pan.
  3. Spray tortillas with cooking spray or lightly coat with oil and sprinkle salt on top.
  4. Put tray in the oven and cook until just browned and crispy (about 10-15 min, stirring half way through). Alternatively, you can bake chips in an air fryer for 6-8 minutes.

Guacamole:

  1. Mash together the avocados, lime juice, and salt in a bowl.
  2. Mix in onion, cilantro, tomatoes, and garlic.
  3. Stir in cayenne pepper.
