Frozen Frosted Fudge Squares

Makes 12 brownies


INGREDIENTS

  • 1 ¼ cups walnuts
  • ¼ cup water
  • 1 cup pure maple syrup
  • ¾ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 ¼ cups cooked, peeled sweet potato (about 1 medium sweet potato)
  • ½ cup oat flour
  • ¼ cup shelled pistachios, coarsely chopped, for dusting bottom of pan and top of fudge

DIRECTIONS

  1. In a food processor blend the walnuts and water until they form a clump.
  2. To the food processor add the maple syrup, cocoa powder, vanilla and blend until smooth, about 2 minutes.
  3. Into a small bowl, scoop out half of the chocolate mixture from the food processor and set aside. This amount is the frosting for the brownies.
  4. To the chocolate mixture still in the food processor add the cooked sweet potato and blend until smooth, about a minute.
  5. To the mixture add the oat flour and gently pulse the food processor until the flour is incorporated.
  6. Sprinkle ½ of the chopped pistachios in the base of a 9×9-inch pan, add the brownie mix, and frost with the reserved frosting! Sprinkle the rest of the pistachios on top of the frosting and freeze for at least an hour before serving.
  7. Allow to thaw for a few minutes before serving as it makes it easier to slice into squares. These are so delicious ‘they can’t be vegan!
