Frijoles Molidos (Mashed Black Beans)

INGREDIENTS
- 2 tsp neutral oil, like vegetable or canola
- ¼ cup white or yellow onion roughly chopped
- 1 clove garlic, roughly chopped
- 1 small jalapeño or ½ a small serrano
- ¼ cup tomato paste or dry packed sun dried tomatoes
- ½ tsp kosher salt
- ½ cup cilantro leaves and stems,roughly chopped
- 1 (15oz) can black beans, with liquid
- 1/3 cup water
DIRECTIONS
- Heat the oil in a small saucepan over medium heat.
- Add the onion and garlic and cook for 2 minutes,stirring occasionally.
- Add jalapeño, tomato paste (or sun-dried tomatoes) and salt and cook for 2 more minutes,stirring occasionally.
- Add cilantro, beans with liquid and water.
- Stir to combine and cook, uncovered, for 5minutes.
- Reduce heat to low and, using an immersion blender, blender or food processor, blend until smooth.
- Cook uncovered for 15-20 min. The beans will continue to thicken as they cool.
