Frijoles Molidos (Mashed Black Beans)

INGREDIENTS

  • 2 tsp neutral oil, like vegetable or canola
  • ¼ cup white or yellow onion roughly chopped
  • 1 clove garlic, roughly chopped
  • 1 small jalapeño or ½ a small serrano
  • ¼ cup tomato paste or dry packed sun dried tomatoes
  • ½ tsp kosher salt
  • ½ cup cilantro leaves and stems,roughly chopped
  • 1 (15oz) can black beans, with liquid
  • 1/3 cup water

DIRECTIONS

  1. Heat the oil in a small saucepan over medium heat.
  2. Add the onion and garlic and cook for 2 minutes,stirring occasionally.
  3. Add jalapeño, tomato paste (or sun-dried tomatoes) and salt and cook for 2 more minutes,stirring occasionally.
  4. Add cilantro, beans with liquid and water.
  5. Stir to combine and cook, uncovered, for 5minutes.
  6. Reduce heat to low and, using an immersion blender, blender or food processor, blend until smooth.
  7. Cook uncovered for 15-20 min. The beans will continue to thicken as they cool.
