Fluffy Pancakes or Waffles with Peach Compote Recipe

INGREDIENTS
- 1 cup whole wheat flour, or 1/2 cup whole wheat flour plus 1/2 cup buckwheat, oat or spelt flour.
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon baking soda
- 1 cup buttermilk, kefir or plain low-fat yogurt
- 2 eggs
- 2 teaspoons vegetable oil, plus a bit more for the griddle
DIRECTIONS
- Whisk together flour, salt and baking soda in a medium-sized bowl.
- In a separate bowl, whisk together buttermilk, eggs and oil. Whisk buttermilk mixture into flour mixture just until there are no lumps. If necessary, add a bit of milk or water to obtain a batter that is not too thick or too runny.
- Pancakes: Heat griddle or large pan. When heated (so water sizzles on pan), spray with cooking spray or apply small amount of oil so pancakes do not stick. Ladle about ¼ cup of batter onto pan. Cook about 2-3 minutes or until you see bubbles forming in batter. Flip pancakes and cook another 2 minutes or until browned and cooked through.
- Waffles: Preheat waffle iron. Spray with cooking spray or apply small amount of oil so waffles do not stick. Pour about ½ cup batter into waffle iron and press down. Cook until waffle is brown and crisp on outside. Repeat with rest of the batter.
PEACH COMPOTE
Ingredients:
- 2 cups chopped peaches (also can use other stone fruit: apricots, plums, nectarines, etc.)
- 1 Tablespoon butter
- 1 Tablespoon honey
Method:
- Place all ingredients in sauté pan.
- Simmer for 5 minutes at low heat
- Serve Over pancakes or waffle
