Dal - Spiced Lentil Soup

Serves: 4 – 6


INGREDIENTS

Wet Ingredients:

  • 2 teaspoon avocado oil
  • 1.5 cups dried red lentils
  • 4.5 cups water/veggie broth

Vegetables:

  • 1 red diced onion
  • 1 diced tomato
  • ½ cup chopped cilantro
  • ½ squeezed lemon
  • 1 cup baby greens

Spices:

  • 2 teaspoon cumin seeds
  • ¼ teaspoon red chili flakes (optional)
  • 1 teaspoon salt (lesser or more per your taste)
  • ½ teaspoon cinnamon powder
  • ½ teaspoon of black pepper
  • 3 diced garlic cloves
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon grated fresh turmeric or 2 teaspoon turmeric powder

DIRECTIONS

  1. Rinse the dal (lentils), soak in a bowl of water, in a large pot, heat the oil.
  2. Once it is hot, add onion, garlic, ginger, and turmeric
  3. Sauté till onions is translucent and add tomatoes
  4. Once the tomatoes start drying up, add cumin, cinnamon, and chili flakes
  5. Let it crackle
  6. Add the dal, let it crackle then add water
  7. Simmer and cover till lentils soften. (Around 40 mins)
  8. Add some baby greens, simmer till wilted.
  9. Serve in a bowl with some whole grains like quinoa/brown rice
