Dal - Spiced Lentil Soup
Serves: 4 – 6
INGREDIENTS
Wet Ingredients:
- 2 teaspoon avocado oil
- 1.5 cups dried red lentils
- 4.5 cups water/veggie broth
Vegetables:
- 1 red diced onion
- 1 diced tomato
- ½ cup chopped cilantro
- ½ squeezed lemon
- 1 cup baby greens
Spices:
- 2 teaspoon cumin seeds
- ¼ teaspoon red chili flakes (optional)
- 1 teaspoon salt (lesser or more per your taste)
- ½ teaspoon cinnamon powder
- ½ teaspoon of black pepper
- 3 diced garlic cloves
- 1 tablespoon grated fresh ginger
- 1 tablespoon grated fresh turmeric or 2 teaspoon turmeric powder
DIRECTIONS
- Rinse the dal (lentils), soak in a bowl of water, in a large pot, heat the oil.
- Once it is hot, add onion, garlic, ginger, and turmeric
- Sauté till onions is translucent and add tomatoes
- Once the tomatoes start drying up, add cumin, cinnamon, and chili flakes
- Let it crackle
- Add the dal, let it crackle then add water
- Simmer and cover till lentils soften. (Around 40 mins)
- Add some baby greens, simmer till wilted.
- Serve in a bowl with some whole grains like quinoa/brown rice
