Cumin Roasted Cauliflower

Serves: 4


INGREDIENTS

  • 1 large head of cauliflower (4-5 cups chopped)
  • 1 Tablespoon of olive oil
  • 1 teaspoon ground cumin or cumin seeds
  • ¼ teaspoon salt
  • ¼ cup golden raisins (or any dried fruit)
  • 1 Tablespoon lemon juice
  • ¼ cup cilantro, chopped

DIRECTIONS

  1. Preheat oven to 450 degrees.
  2. Combine olive oil, cumin, and salt in a large bowl and stir well.
  3. Chop cauliflower into bite sized, uniform pieces (about 1 inch).
  4. Mix cauliflower into cumin and olive oil mixture and stir well.
  5. Spread out cauliflower on a baking sheet (widely spread out so not piled up to allow for browning)
  6. Bake in oven for 20 minutes (checking it 10 min through to stir it)
  7. Remove cauliflower from oven and sprinkle with lemon juice, cilantro, and raisins.
