Cumin Roasted Cauliflower
Serves: 4
INGREDIENTS
- 1 large head of cauliflower (4-5 cups chopped)
- 1 Tablespoon of olive oil
- 1 teaspoon ground cumin or cumin seeds
- ¼ teaspoon salt
- ¼ cup golden raisins (or any dried fruit)
- 1 Tablespoon lemon juice
- ¼ cup cilantro, chopped
DIRECTIONS
- Preheat oven to 450 degrees.
- Combine olive oil, cumin, and salt in a large bowl and stir well.
- Chop cauliflower into bite sized, uniform pieces (about 1 inch).
- Mix cauliflower into cumin and olive oil mixture and stir well.
- Spread out cauliflower on a baking sheet (widely spread out so not piled up to allow for browning)
- Bake in oven for 20 minutes (checking it 10 min through to stir it)
- Remove cauliflower from oven and sprinkle with lemon juice, cilantro, and raisins.
