Creamy Broccoli and Lemon Pasta

INGREDIENTS
- 2 cans (15 oz each) Vegetable broth (or 3 ½ cups homemade)
- 1 teaspoon grated lemon peel
- ¼ teaspoon pepper
- 2 cloves garlic, chopped (or use garlic press)
- 6 cups chopped broccoli
- 8 oz whole grain thin spaghetti (½ package) or pasta of your choice (cooking time may change)
- ½ cup non fat or low-fat Greek yogurt (can substitute ½ cup mashed avocado instead)
- 2 Tablespoons fresh parmesan cheese
DIRECTIONS
- Combine broth, lemon peel, garlic, and pepper in a deep saucepan and bring to a boil.
- Add pasta (broken in half if needed to fit pan) to broth and stir.
- Chop broccoli into bite sized pieces and add to boiling broth after pasta cooks about 2-3 minutes.
- Cook for about 5-6 minutes or until broccoli and pasta are cooked.
- Remove from heat and stir in greek yogurt and parmesan cheese.
