Creamy Broccoli and Lemon Pasta

INGREDIENTS

  • 2 cans (15 oz each) Vegetable broth (or 3 ½ cups homemade)
  • 1 teaspoon grated lemon peel
  • ¼ teaspoon pepper
  • 2 cloves garlic, chopped (or use garlic press)
  • 6 cups chopped broccoli
  • 8 oz whole grain thin spaghetti (½ package) or pasta of your choice (cooking time may change)
  • ½ cup non fat or low-fat Greek yogurt (can substitute ½ cup mashed avocado instead)
  • 2 Tablespoons fresh parmesan cheese

DIRECTIONS

  1. Combine broth, lemon peel, garlic, and pepper in a deep saucepan and bring to a boil.
  2. Add pasta (broken in half if needed to fit pan) to broth and stir.
  3. Chop broccoli into bite sized pieces and add to boiling broth after pasta cooks about 2-3 minutes.
  4. Cook for about 5-6 minutes or until broccoli and pasta are cooked.
  5. Remove from heat and stir in greek yogurt and parmesan cheese.
