Chocolate Zucchini Muffins

INGREDIENTS
- 2 cups whole wheat flour (or oat flour– can be made by grinding 2 cups oatmeal in blender)
- 1 tsp baking powder
- 1tsp baking soda
- 1/2 tsp salt
- 1/4 cup cocoa
- 1/2 cup, maple syrup (or brown sugar or date paste)
- 1 1/2 cups applesauce
- 1/2 cup unsweetened almond milk (or other unsweetened milk)
- 1Tbsp vanilla
- 1tsp apple cider vinegar or white vinegar
- 1 full cup grated zucchini
- 3/4 cup or more dairy-free chocolate chips (optional)
- 1/4 cup chopped walnuts or other nut

DIRECTIONS
- Preheat oven to 350°F.
- In a large bowl, mix together all dry ingredients: whole wheat flour, baking powder, baking soda, cocoa, salt.
- In a medium-sized bowl, combine all of the wet ingredients–maple syrup (or sugar or date puree), applesauce, plant milk, vanilla, and vinegar.
- Pour the well-blended wet mixture into the large bowl with dry ingredients.
- Add grated zucchini and chocolate chips, and nuts (if using) to the bowl and mix well.
- Spoon or scoop batter into muffin pan non-stick pan, silicone baking cups, or paper cups.
- Place in oven and bake for 25 minutes or until just done (fork or toothpick goes in without wetness on it).
