Chocolate Zucchini Muffins

INGREDIENTS

  • 2 cups whole wheat flour (or oat flour– can be made by grinding 2 cups oatmeal in blender)
  • 1 tsp baking powder
  • 1tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup cocoa
  • 1/2 cup, maple syrup (or brown sugar or date paste)
  • 1 1/2 cups applesauce
  • 1/2 cup unsweetened almond milk (or other unsweetened milk)
  • 1Tbsp vanilla
  • 1tsp apple cider vinegar or white vinegar
  • 1 full cup grated zucchini
  • 3/4 cup or more dairy-free chocolate chips (optional)
  • 1/4 cup chopped walnuts or other nut
    (optional)

DIRECTIONS

  1. Preheat oven to 350°F.
  2. In a large bowl, mix together all dry ingredients: whole wheat flour, baking powder, baking soda, cocoa, salt.
  3.  In a medium-sized bowl, combine all of the wet ingredients–maple syrup (or sugar or date puree), applesauce, plant milk, vanilla, and vinegar.
  4.  Pour the well-blended wet mixture into the large bowl with dry ingredients.
  5. Add grated zucchini and chocolate chips, and nuts (if using) to the bowl and mix well.
  6. Spoon or scoop batter into muffin pan non-stick pan, silicone baking cups, or paper cups.
  7. Place in oven and bake for 25 minutes or until just done (fork or toothpick goes in without wetness on it).
