Cauliflower Rice

INGREDIENTS

  • 1 cauliflower head, cut into florets
  • 1 teaspoon oil
  • ½ teaspoon cumin seeds
  • ½ red onion, chopped into small pieces
  • ½ teaspoon salt
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ¼ teaspoon black pepper powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon Garam Masala powder
  • 2 Tablespoons cilantro, chopped

DIRECTIONS

  1. Pulse the Cauliflower florets in a Food processor with the S-shaped blade, for a few seconds each time, until they become small like rice.
    Option: Grate it with a grater with large holes or chop by hand
  2. Heat oil in your favorite pan
    Option: You can cook it in the microwave now for 5minutes while the rest of the ingredients are cooking.
  3. Add cumin seeds and let it sputter.
  4. Add chopped onion, a small pinch of salt and sauté until sides look cooked.
  5. Add the turmeric, black pepper, cumin, coriander powders and stir for a minute.
  6. Add the cauliflower rice, salt to taste, Garam Masala,most of the cilantro and stir.
  7. Cover and let it cook for 5 minutes.
  8. Stir and cover again to cook for 5 minutes if you had not put it in the microwave earlier and it does not look soft yet.
  9. Remove cover and stir till most of the moisture evaporates.
  10. Sprinkle some cilantro for color.
