Cauliflower Rice

INGREDIENTS
- 1 cauliflower head, cut into florets
- 1 teaspoon oil
- ½ teaspoon cumin seeds
- ½ red onion, chopped into small pieces
- ½ teaspoon salt
- ½ teaspoon cumin powder
- ½ teaspoon coriander powder
- ¼ teaspoon black pepper powder
- ¼ teaspoon turmeric powder
- ½ teaspoon Garam Masala powder
- 2 Tablespoons cilantro, chopped
DIRECTIONS
- Pulse the Cauliflower florets in a Food processor with the S-shaped blade, for a few seconds each time, until they become small like rice.
Option: Grate it with a grater with large holes or chop by hand
- Heat oil in your favorite pan
Option: You can cook it in the microwave now for 5minutes while the rest of the ingredients are cooking.
- Add cumin seeds and let it sputter.
- Add chopped onion, a small pinch of salt and sauté until sides look cooked.
- Add the turmeric, black pepper, cumin, coriander powders and stir for a minute.
- Add the cauliflower rice, salt to taste, Garam Masala,most of the cilantro and stir.
- Cover and let it cook for 5 minutes.
- Stir and cover again to cook for 5 minutes if you had not put it in the microwave earlier and it does not look soft yet.
- Remove cover and stir till most of the moisture evaporates.
- Sprinkle some cilantro for color.
