Banana Oat Waffles with Berries and Maple - Almond Drizzle

INGREDIENTS
Waffles:
- 2 cups Old fashioned oats
- 2 Tablespoons ground flax
seeds - 1 teaspoon cinnamon
- 2 small bananas (or 1 ½ large)
- 1 cup almond milk
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- ½ teaspoon baking soda
Maple Almond Drizzle:
- 2 tablespoons almond butter (or cashew butter or peanut butter)
- 1 tablespoon maple syrup (or honey)
- 1-2 tablespoons warm water
Toppings:
- 2-3 cups fresh berries (strawberries, raspberries, blueberries, etc)
- ¼ cup almond Slices
DIRECTIONS
Waffles:
- Put oats in a blender or food processor and blend until a powder.
- Add flax seed, cinnamon, bananas, almond milk, and vanilla and purée.
- Add baking powder and baking soda and gently blend (do not overmix).
- Pour onto and cook on pre-heated waffle iron or skillet.
Maple Almond Drizzle:
- Stir together (or put in blender) until pourable consistency.
To Assemble:
- Top waffles with fresh berries (strawberries, raspberries, blackberries, blueberries), 1 Tablespoon almond slices per waffle, and maple-almond drizzle
