Banana Oat Waffles with Berries and Maple - Almond Drizzle

Serves: 4


INGREDIENTS

Waffles:

  • 2 cups Old fashioned oats
  • 2 Tablespoons ground flax
    seeds
  • 1 teaspoon cinnamon
  • 2 small bananas (or 1 ½ large)
  • 1 cup almond milk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

Maple Almond Drizzle:

  • 2 tablespoons almond butter (or cashew butter or peanut butter)
  • 1 tablespoon maple syrup (or honey)
  • 1-2 tablespoons warm water

Toppings:

  • 2-3 cups fresh berries (strawberries, raspberries, blueberries, etc)
  • ¼ cup almond Slices

DIRECTIONS

Waffles:

  1. Put oats in a blender or food processor and blend until a powder.
  2. Add flax seed, cinnamon, bananas, almond milk, and vanilla and purée.
  3. Add baking powder and baking soda and gently blend (do not overmix).
  4. Pour onto and cook on pre-heated waffle iron or skillet.

Maple Almond Drizzle:

  • Stir together (or put in blender) until pourable consistency.

To Assemble:

  • Top waffles with fresh berries (strawberries, raspberries, blackberries, blueberries), 1 Tablespoon almond slices per waffle, and maple-almond drizzle
