Banana Blueberry Oatmeal Cake
Serves: 4-6
INGREDIENTS
- 2 bananas, sliced into thin slices
- 2 cups blueberries (fresh or frozen)
- 2 cups Old Fashioned oats
- 2 Tablespoons brown sugar or 2 large dates
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 2 cups almond milk (or milk of your choice—unsweetened variety)
- 1 Tablespoon flax seed,ground
- 1 teaspoon vanilla
DIRECTIONS
- Preheat oven to 400 degrees.
- Prepare a square (at least 8×8”) or rectangular baking dish with cooking spray or line with parchment paper.
- Slices bananas and place them in the bottom of the baking dish.
- Cover bananas with washed blueberries.
- In a bowl, combine the dry ingredients: oats,brown sugar (if using dates, put them in the wet ingredients), baking powder, and cinnamon and stir well.
- In a blender or food processor (or another bowl), mix the wet ingredients: almond milk,dates (if using), flax seeds, and vanilla and stir/blend well.
- Pour the wet ingredients into the dry ingredients and stir just until mixed.
- Pour into the baking pan with the bananas and blueberries. Top with the chopped nuts.Sprinkle some extra cinnamon on top if you like.
- Bake at 400 degrees for 20-25 minutes or until cooked in the middle.
