Banana Blueberry Oatmeal Cake

Serves: 4-6


INGREDIENTS

  • 2 bananas, sliced into thin slices
  • 2 cups blueberries (fresh or frozen)
  • 2 cups Old Fashioned oats
  • 2 Tablespoons brown sugar or 2 large dates
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 cups almond milk (or milk of your choice—unsweetened variety)
  • 1 Tablespoon flax seed,ground
  • 1 teaspoon vanilla

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Prepare a square (at least 8×8”) or rectangular baking dish with cooking spray or line with parchment paper.
  3. Slices bananas and place them in the bottom of the baking dish.
  4. Cover bananas with washed blueberries.
  5. In a bowl, combine the dry ingredients: oats,brown sugar (if using dates, put them in the wet ingredients), baking powder, and cinnamon and stir well.
  6. In a blender or food processor (or another bowl), mix the wet ingredients: almond milk,dates (if using), flax seeds, and vanilla and stir/blend well.
  7. Pour the wet ingredients into the dry ingredients and stir just until mixed.
  8. Pour into the baking pan with the bananas and blueberries. Top with the chopped nuts.Sprinkle some extra cinnamon on top if you like.
  9. Bake at 400 degrees for 20-25 minutes or until cooked in the middle.
